It will happen, each year without fail. It begins with one child, next thing you know the second child has it, and then finally the parents.
A dreaded winter cold.
It is my least desirable aspect of the winter months.
Just when I thought I had managed to escape it, low and behold, I've got it too. I'd much rather stay wrapped up in a blanket with my vapor rub, some cough drops, and read the day away, but I still have to hold down the fort. That means dinner still has to find its way to the table and around here the natives tend to get restless when the option of a microwave meal is suggested, so....
Chicken Cannellini Soup to the rescue!
This soup saves the day because it is simple, quick, and has a gourmet flavor!
Cannellini Soup: (Serves 6)
3 pounds of skinless, boneless chicken breast
2 small onions, chopped
2 garlic cloves, minced
1 Tbsp. Vegetable Oil
4 cups of Chicken Broth
2 (15 oz.) cans of Cannellini Beans, drained and rinsed
1 (15 oz.) can of Cannellini Beans, drained and mashed
1 can diced green chile's
1 teaspoon salt
3/4 teaspoon oregano
1 tablespoon cumin
1/2 teaspoon chili powder
1/2 teaspoon pepper
1/8 teaspoon ground cloves
1/8 teaspoon red pepper
4 cups kale or spinach
(Garnish with Cheese and Sour Cream)
Begin by cutting the chicken into bite size pieces. Saute the chicken, onion, and garlic in hot oil. Stir in the broth and the next ten ingredients. Bring to a boil, cover, and reduce the heat. Simmer for 25 minutes. Stir in the kale or spinach and simmer, uncovered, about 3 minutes more or until the kale or spinach is tender.
So let's get started....
Cooking the chicken is the part that takes the longest, but I promise it is still a quick meal to whip up.
While the chicken is cooking I mash the one can of beans. That doesn't look very appealing, but in the end you'll see, it turns out picture perfect.
It's all in, time to sit back and let the magic happen.
At the end of the 25 minutes add the kale or spinach.

Oh yum! I've been craving a soup lately, but I don't have very many good soup recipes, so I'll have to try this.
